This tender roasted asparagus with Parmesan is lightly crisp with fantastic flavor. It features garlic, cracked pepper, flaky salt, a drizzle of olive oil, and a bright squeeze of lemon. It’s a healthy delicious side for any meal.

Roasting asparagus in the oven is quick and easy to do, and a real time saver. You can prep your main dish on stovetop while the asparagus is roasting in the oven. After you try it once, oven roasting will become your favorite method for preparing this veggie.

The only kitchen tools you’ll need: a large rimmed baking tray, parchment paper (for easy clean-up), a garlic press or knife, and kitchen tongs. If you have a lemon press, that’s helpful but not required.

  • A fresh bundle of thin asparagus
  • Extra-virgin olive oil
  • Fresh garlic, pressed or minced
  • Maldon flaky salt
  • Freshly-ground black pepper
  • Grated Parmesan cheese
  • Butter (optional)
  • Freshly-squeezed lemon juice

🧑🏼‍🍳 HOW TO STORE FRESH ASPARAGUS: During asparagus season you’ll want to buy a few bundles at the farmers market. Keep them fresh in the fridge for several days by placing the stalks in a large mason jar filled with 3 inches of cold water. Cover the tops in plastic wrap for extra protection.

📖 RECIPE STEPS

PREP THE ASPARAGUS

  1. Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper.
  2. Rinse the asparagus. Pat stalks dry between paper towels.
  3. Snap off the dry woody ends and discard them.
  4. Place asparagus on the prepared tray.

SEASON & ROAST

  1. Drizzle the asparagus with olive oil. Sprinkle with pressed garlic, cracked black pepper, flaky salt, and a dusting of grated Parmesan.
  2. Gently toss the asparagus until fully coated in oil, spices and cheese.
  3. Roast asparagus in the oven for 9 to 12 minutes, or until the stalks slightly shrivel and become fork tender.
  4. Remove from oven. If desired, drizzle with melted butter.

  • 2 teaspoons olive oil
  • 2 cloves garlic, minced or pressed
  • Flaky salt, to taste
  • Freshly-ground black pepper, to taste
  • 1/4 cup grated Parmesan cheese, divided
  • 2 tablespoons butter (optional)
  • 1 lemon, for juice

Instructions

RECIPE PREP: Preheat oven to 425°F. Line a large rimming baking sheet with parchment paper.

  1. Rinse asparagus and pat dry between clean kitchen towels.
  2. Snap off the thick, tough woody ends and discard them.
  3. Place the asparagus the prepared baking sheet in a single layer.
  4. Drizzle olive oil over the asparagus. Sprinkle with pressed garlic, flaky salt, cracked pepper, and a few pinches of Parmesan. Toss the stalks until they’re well coated in the oil, spices and cheese.
  5. Bake thin stalks for 9 to 12 minutes (bake thicker stalks for 15 to 20 minutes), or until slightly wilted and fork tender. If desired, drizzle with melted butter.
  6. Transfer roasted asparagus to a serving tray. Brighten the flavor with a squeeze of lemon juice. Sprinkle the top with remaining Parmesan cheese.

Notes

Recipe Variations: Lightly drizzle roasted asparagus with thick balsamic vinegar. For a hint of heat, sprinkle with red pepper flakes. For special occasions like Thanksgiving dinner, sprinkle the roasted asparagus with toasted sliced almonds.
